Cumin is strong, heavy, spicy-sweet, with warm depth. The flavor is rich, slightly bitter, sharp, earthy and warm, with a pungency. Very popular in Asian cuisines, especially Indian, and essential to curry and lamb dishes. Mixed with Mexican Oregano and paprika in Mexican cooking, it is used in many meat, lentil and bean dishes, and even with fruits, such as mangoes.
