Cinnamon has a warm, agreeably sweet, woody aroma that is delicate yet intense; the taste is fragrant and warm with hints of clove and citrus. One of the oldest known spices, cinnamon's subtle flavor is well suited to all manner of deserts and spiced breads and cakes; it combines particularly well with chocolate, apples, bananas and pears. It also makes an excellent flavoring for many meat and vegetable dishes, lamb or chicken tagines and used to flavor coffee and chocolate drinks, as well as mulled wine. It is a key ingredient in both Chinese 5 Spice and Indian Garam Masala.
